Hi,
My car is around 7000 mi. When I start, the Maint Req light flashes for a few seconds. I plan to change the oil and the
diff fluid myself at 7500 mi. Does this light reset itself at every
service interval?

From the owners manual

1. Turn off the engine

2. Press and hold the select and reset buttons on the instrument panel, then turn the ignition switch on.

3. Hold the buttons for approximately ten seconds until the indicator resets.

That is a normal "feature"

As wpf said you can manually reset it yourself.
